Let me tell you about my quest to make greens tasty…I find greens like kale, swiss chard & cabbage taste boring. I know they’re detoxification & gut health superstars. They’re full of fiber, antioxidants, vitamins & minerals. But I won’t eat things I don’t like. Thus began my mission to make greens taste good.

I discovered this butter after much trial & error. And it was worth the effort! I now LOVE greens when I top them with this butter. It’s savoury with the perfect amount of umami mixed in. Some things are just better with butter!

Grass-fed is worth the extra investment if you can swing it. It contains 500% more CLA than regular butter. CLA has been shown to prevent bone loss, potentially fight cancer & reduce fat mass.

Directions

  1. Add all ingredients to your food processor & blend until well-mixed.

  2. Store in an airtight container & freeze any extras!

Ingredients

  • 250g organic butter *grass-fed ideally

  • 2 cloves garlic, peeled

  • 1 tsp dried chili flakes

  • 4 anchovy filets

  • 2 sprigs rosemary, leaves picked

  • 3 tbsp chopped fresh sage

  • 1 tsp kosher salt

 
 

Notes

How to Serve - Serve over any warm greens or use it to reheat any veggie! This is great with kale, bok choy, napa cabbage, dandelion greens, swiss chard, cabbage - if it’s green, it goes!
