This Pumpkin Custard will satisfy your fall sweet cravings & it’s sugar-free & low-carb!

Gelatin is used to create its creamy consistency. Gelatin can help to clear up digestive issues by strengthening the gut lining which also helps to lower inflammation. And clinical trials have shown supplementing with gelatin helps to alleviate pain in both joints & muscles, improve recovery & athletic abilities!

My favourite way to supplement with gelatin is by making delicious but healthy desserts like this Pumpkin Spice Custard.

 
 

Directions

  1. Add milk & gelatin to a pot over low-medium heat & combine well.

  2. Add the rest of the ingredients & stir until well mixed.

  3. Pour into ramekins or 1 large container & chill until solid.

  4. Top with whipped cream & enjoy!

     

Ingredients

  • 400ml can full fat coconut milk

  • 1 tbsp gelatin

  • 15oz can pumpkin puree

  • ¾ tsp stevia

  • 1 tsp cinnamon

  • ¼ tsp ginger

  • ¼ tsp cloves

  • ¼ tsp sea salt

 
 

Notes

How to Serve - Serve as-is or top with either regular or coconut whipped cream & sprinkle with toasted walnuts, pecans or almonds and a dusting of cinnamon.
