Directions

  1. Line a large baking sheet with parchment paper.

  2. Add all ingredients except the chocolate, Maldon salt & coconut to your food processor or a large bowl.

  3. Combine until a thick sticky dough forms. Too sticky? Add a little more oat flour or protein powder.

  4. Taste & adjust seasonings. Wet your hands, form into bite-size balls & place on your prepared pan.

  5. Melt chocolate in the microwave or using a double boiler & drizzle over the balls.

  6. Sprinkle with Maldon salt & coconut.

  7. Freeze until set (about 30 min), transfer to an airtight container & store in the freezer.

  8. Grab a ball when you’re craving a sweet, need a snack or want some pumpkin spice in your day!

     

Ingredients

  • 1 ½ cups vanilla protein powder (I used Schinoussa whey isolate)

  • 1 cup oat flour (gf)

  • 1 cup pumpkin puree

  • ¼ tsp sea salt

  • ¼ cup dark chocolate

  • 2 ½ tsp pumpkin pie spice or 1 ½ tsp cinnamon & ¼ tsp each allspice, cloves, nutmeg & ginger

  • Maldon salt & toasted shredded coconut to taste (optional but delicious!)
