These tasty Pumpkin Spice Protein Balls make for a quicky & easy snack or dessert! 

I like to have dessert every night. Something small (& sometimes something big!) to satisfy my sweet tooth. And to avoid gut issues like bloating, gas, cramping & messed up BM’s, I look for low-sugar treats.

These balls are not only low in sugar, but have a decent amount of protein & fiber. If you have 15 min, whip up a batch so you have a healthy grab & go snack or dessert that will satisfy your pumpkin spice cravings!

 

Pumpkin Spice Protein Balls will satisfy those fall cravings!

 

Directions

  1. Line a large baking sheet with parchment paper.

  2. Add all ingredients except the chocolate, Maldon salt & coconut to your food processor or a large bowl.

  3. Combine until a thick sticky dough forms. Too sticky? Add a little more oat flour or protein powder.

  4. Taste & adjust seasonings. Wet your hands, form into bite-size balls & place on your prepared pan.

  5. Melt chocolate in the microwave or using a double boiler & drizzle over the balls.

  6. Sprinkle with Maldon salt & coconut.

  7. Freeze until set (about 30 min), transfer to an airtight container & store in the freezer.

  8. Grab a ball when you’re craving a sweet, need a snack or want some pumpkin spice in your day!

     

Ingredients

  • 1 ½ cups vanilla protein powder (I used Schinoussa whey isolate)

  • 1 cup oat flour (gf)

  • 1 cup pumpkin puree

  • ¼ tsp sea salt

  • ¼ cup dark chocolate

  • 2 ½ tsp pumpkin pie spice or 1 ½ tsp cinnamon & ¼ tsp each allspice, cloves, nutmeg & ginger

  • Maldon salt & toasted shredded coconut to taste (optional but delicious!)

 
 

Notes

In a Rush? - Skip the melted chocolate, Maldon salt & coconut topping!
