Quick Pickled Onions

Bored with your usual burgers, tacos or salads? Make them next level with Quick Pickled Onions! This is a super easy way to add tons of flavour (& nutrients) without a ton of calories. And huge bonus - these onions will NOT leave you with that terrible, ‘I just ate a whole onion & my breath is horrendous’ issue. It completely cuts the aftertaste.

Did you know that onions are a superfood? They are rich in prebiotics, antioxidants & compounds like sulfur that help strengthen the gut, immune & cardiovascular health.

If you struggle with gas & bloating when you eat onions, it may be a case of the ‘dose makes the poison’. Experiment with a little bit of onion (I’m talking like 1 tbsp) every 2-3 days & monitor your symptoms. If you are still gassy, maybe this veggie is best avoided until you get to the bottom of your gut issues. 

Directions

  1. Add the water, vinegar & salt to a small pot over med-high heat. Stir until the salt dissolves & then bring the mixture to a simmer.

  2. While the vinegar mixture heats up, peel & slice the onion into very thin rings.

  3. Place the onion in a jar, pour the vinegar mixture over & using a spoon, press the onion down until it’s covered by the liquid.

  4. Screw on the lid & marinate in the fridge for at least 30 min.

  5. This will keep for up to at least 5 days in the fridge & is great over burgers, tacos, salads, sandwiches & nachos! It’s also a great way to revive leftovers!

Ingredients

  • ¼ cup filtered water

  • ¾ cup apple cider vinegar

  • 1 tsp sea salt

  • 1 red onion

Notes

Vinegar - You can use white vinegar instead of apple cider vinegar, or a mixture of the two vinegars.

Too Vinegary? - Add 1 tbsp of maple syrup or honey to the vinegar mixture on the stove.

How to Serve - These are great over burgers, tacos, any salad, sandwich & even nachos! This is also a perfect way to refresh leftovers.
