Go-To Shrimp For Every Occasion

Are you worried about what to eat at BBQs, cottage parties & other events this summer?
Whether you’re on a diet for weight loss, symptom control or other health goals, I feel for you. I have been on numerous elimination diets, cannot eat gluten & occasionally go through a ‘cut’ phase (caloric deficit) which can make social gatherings involving food difficult. Or maybe you’re not a great cook or short on time & appetizers are overwhelming. Until now.
Go-To Shrimp for Every Occasion is perfect for every occasion (hence the name)! I get compliments EVERY SINGLE TIME I share this dish. If I get invited for drinks at a friend’s house, I bring shrimp. If I get invited to a BBQ, I bring my shrimp. Christmas Eve dinner at my MIL’s? Shrimp is either an appetizer or an late-night snack. Hosting dinner? I have shrimp ready in the fridge.
This takes 5 min to make & it can be a last-minute dish (shrimp thaws in 10-20 min!).
And the best part about this dish? It’s pure protein. This means it will help to satiate you without a ton of calories & smooth any blood sugar spikes you may get from indulging at your event! And if we’ve met, you know that I want you to eat adequate protein to support your hormonal health, mood, energy & to help put on muscle!
Directions
Thaw the shrimp in a bowl of cold water.
Once thawed, peel if not already peeled & dry thoroughly.
Set your oven to broil with the oven rack at the highest spot.
Gently toss the shrimp with the oil, salt & garlic.
Transfer the shrimp to a baking sheet & broil for 3 min, or until opaque & cooked through.
For the cocktail sauce, combine the tomato sauce, ketchup, lemon juice & horseradish. Taste & adjust seasonings if needed. Enjoy!
Ingredients
1 bag frozen shrimp (ideally wild or organic)
1 tbsp Extra Virgin Olive Oil
1/4 tsp sea salt
1/2 clove garlic (minced)
For the Cocktail Sauce:
1/2 cup tomato sauce, marinara or passata (I like Rao’s marinara)
1/4 cup low-sugar ketchup
1-2 tsp fresh lemon juice
1-2 tbsp Bubbie’s horseradish
Notes
Add More Flavour - Toss with red chili flakes, ground cumin and/or chopped fresh cilantro or parsley before cooking.
Budget-Friendly - Watch for shrimp to go on sale & stock up to make this dish fit any budget.
Keep it Cool - If you get invited to a lot of outdoor events, invest in a platter that holds ice in the base to keep your shrimp cool for hours.
Switch it Up - Serve with mango salsa or guacamole instead of cocktail sauce.
