Beet, Fennel & Arugula Salad

I can’t believe how easy this salad is. And even better? It’s tasty, high in fiber & great for digestion!
Beets & arugula are superstars. Both are rich in nitrates, which the body uses to produce nitric oxide, a powerful vasodilator that increases blood flow through the body. This means better performance – mental, physical & sexual!
They’re also full of antioxidants, detoxifying & both stimulate digestive enzymes & juices. This can really help with issues like bloating, gas, constipation & loose stools. I suggest getting your arugula from your local farmer’s market when in season – you cannot beat the flavour of fresh arugula.

Directions
Toss the fennel with a little olive oil & salt, then air fry or roast at 375 degrees until golden & tender. Allow to cool.
While the fennel cooks, drain & dice the beets into bite-sized pieces.
Peel & dice the orange.
Add the arugula, beets, orange & fennel to a large bowl.
Whisk together the oil, salt, Dijon & vinegar in a small dish.
Add the dressing to the salad & toss to combine.
Top with the feta & walnuts. Enjoy!

1 pkg precooked beets
4 cups arugula, washed & dried
1 orange
1 fennel bulb, trimmed & diced
¼ cup dairy-free or regular feta
¼ cup toasted walnuts, chopped
2 tbsp extra virgin olive oil plus more for the fennel
1 tbsp red wine vinegar
1 tbsp Dijon mustard
¼ tsp sea salt

Serve with - This is great with any protein - chicken breast or thighs, a steak, pork chops, broiled salmon - anything goes!

Short on Time? - Use raw fennel instead of cooked!
