Pork Tacos

These tacos are high in protein, rich in nutrients that support our brain, skin, heart, hormonal & immune health, easy to make & very flexible (if you’re missing an ingredient or 4, they’ll still taste great!). And they are sooooo tasty.
Upgrade this dish by using pasture-raised pork which has positive impacts for our body, environment and the life of the pigs. Pasture-raised pork can have up to 3 times the amount of vitamin D, 2 times the amount of vitamin E & higher selenium as pigs raised in confinement.
Directions
Heat a large pan on med-high heat. Once warm, add the olive oil, pork, onion, peppers & garlic. Mix until well combined & the meat is broken up. Fry until the meat is browned then add the salt & spices.
Continue frying until the meat is started to become golden & crispy then add in the sage, tomatoes & water. Cook on med-low until most of the liquid has evaporated.

2lb ground pork
1 tbsp extra virgin olive oil
2 green peppers, seeded & roughly chopped
1 medium onion, peeled & diced
3 cloves garlic, peeled & minced
1 jalapeno, seeded & finely diced
4 medium tomatoes, diced
2 tbsp chopped fresh sage
1 tsp smoked paprika
1 tsp sea salt
½ cup water, filtered
Optional toppings: chopped lettuce, salsa, cilantro, avocado sour cream, hot sauce, a lime wedge

Notes
Toppings - This is great topped with chopped crisp lettuce, fresh diced cilantro, salsa, avocado, sour cream and/or hot sauce.
How to Serve - Serve in taco shells, a wrap or over a bed of lettuce. Add rice or plantain chips on the side!
