Roasted Frozen Broccoli (that doesn’t suck)

You would never guess these veggies came out of the freezer. This recipe is a go-to for our house, especially in the dead of winter when there is literally no fresh produce! Added bonus: it only takes 2 minutes of hands-on work!

 

Frozen veggies are usually picked at their peak ripeness, when they’re the most nutritious.

 

Directions

  1. Preheat the oven to 425ºF. Spread the frozen broccoli into a single layer on a large baking sheet. You may need to use 2 baking sheets.

  2. Place broccoli in the oven & cook until the water has evaporated, about 10-15 minutes. Then remove from oven & pour the broccoli into a bowl.

  3. Toss the broccoli with the oil, salt & any seasonings you want to use. Line the baking sheet with parchment paper. Arrange the seasoned broccoli in a single layer on the baking sheet & return it to the oven.

  4. Roast in the oven for another 15-20 minutes, or until broccoli is tender & golden. Toss at the halfway point.

  5. Remove from the oven and divide between plates. Enjoy!

Ingredients

  • 1 bag frozen broccoli

  • 1 1/2 tbsp extra virgin olive oil

  • 1/4 tsp sea salt

Notes

Switch it Up - use frozen butternut squash or Brussel sprouts

Make it Cheesy - toss in nutritional yeast with the oil & salt

Make it Spicy - toss in red chili flakes & minced garlic with the oil & salt
