Directions for Easy Roasted Cherry Tomato Sauce

  1. Preheat oven to 425 degrees fahrenheit. 

  2. Add the frozen tomatoes, garlic and carrot to an oven-safe dish, sprinkle with the salt and pepper and drizzle with the olive oil.

  3. Roast until most of the water has evaporated and the tomatoes are caramelized and tender.

  4. Remove from the oven and allow to cool slightly. Transfer the tomato mixture to a blender or food processor and puree until smooth. 

  5. This is perfect as a pasta sauce or to use as a condiment on your burger! 

Ingredients

  • 6 cups frozen cherry tomatoes

  • 2 carrots, finely diced

  • 3 cloves garlic, peeled

  • 4 tbsp extra virgin olive oil

  • 1 tsp each salt and pepper

Leftovers - Store in an airtight container in the fridge up to one week or in the freezer for up to a few months.

Add More Flavour - Add basil, thyme, chili flakes or balsamic vinegar before or after roasting the tomatoes.
