Directions for Easy Roasted Cherry Tomato Sauce
Preheat oven to 425 degrees fahrenheit.
Add the frozen tomatoes, garlic and carrot to an oven-safe dish, sprinkle with the salt and pepper and drizzle with the olive oil.
Roast until most of the water has evaporated and the tomatoes are caramelized and tender.
Remove from the oven and allow to cool slightly. Transfer the tomato mixture to a blender or food processor and puree until smooth.
This is perfect as a pasta sauce or to use as a condiment on your burger!

2 carrots, finely diced
3 cloves garlic, peeled
4 tbsp extra virgin olive oil
1 tsp each salt and pepper
