Mocha Latte Protein Balls

YES, these Mocha Latte Balls are THAT good. It’s just a bonus that they’re high in protein, low in calories & super easy to make!
These are perfect as a healthy dessert when you want a sweet treat, an appetizer for any gathering, as a quick protein-rich snack & the perfect way to impress everyone you know.
Directions
Pulse the walnuts in blender or food processor until finely ground.
Add the rest of the ingredients, except the chocolate chips, Maldon salt & coconut, to the food processor & puree until a cookie dough-like texture forms.
Roll into bite size balls using your hands & place on a cookie sheet lined with parchment paper.
Melt the chocolate using a double boiler (a bowl set over a pot with a little boiling water, stirring constantly until melted). Then drizzle over the balls. Sprinkle with salt & coconut.
Freeze until firm & store in an airtight container in the freezer. Enjoy!

1 1/3 cups oat flour
½ cup unsweetened sunflower seed butter
2 cups vanilla protein powder, Schinoussa whey isolate used
½ cup walnuts
1/3 cup coffee, decaf & finely ground
1 tsp stevia powder or to taste
1 tbsp vanilla extract
½ cup filtered water
¼ tsp sea salt
¼ cup dark chocolate chips
¼ tsp Maldon salt & toasted coconut (optional but delicious!)
Notes
In a Rush? - Skip the melted chocolate, Maldon salt & coconut topping!
Sticky Balls? - Dampen your hands before rolling & the dough won’t stick to your skin!
