Avocado & Chicken Sweet Potato Toast

Eggs are a delicious superfood, but also a common food sensitivity. And it can be tough to find breakfast alternatives that are high in protein. Having a protein-rich breakfast is key to setting us up with adequate energy & a balanced mood that will help us thrive throughout the day!
Protein is the building block of our hormones, tissues, bones, organs & our enzymes. And enzymes are essential to our health; they speed up the reactions in our body that enable us to produce energy, digest our food, move, think, hear & see.
In addition to all of that, having high quality protein at every meal is optimal for building muscle!
Directions
Chop the pointy ends off the potato, then slice potato into ¼ -½” slices.
Air fryer: Spray basket with avocado oil, set the slices in basket in a single layer, mist with oil & sprinkle with salt, air fry for 10 min at 400 degrees, flip & cook for another 8 min or until tender & golden.
Oven: Preheat oven to 425 degrees, spray both sides of potato slices with oil, place on a parchment-lined baking sheet & bake for 5 min. Flip the slices & bake for another 5 min or until tender & golden.
Slather the toast with avocado or guacamole, top with sprouts, chicken & tomato. Enjoy!

Fresh mashed avocado or guacamole
Leftover cooked chicken breast, sliced
Cherry tomatoes, halved
Broccoli sprouts, microgreens, arugula – any green!
Avocado oil spray
Sea salt
Notes
*Sweet Potato - Thin & twisted potatoes won’t work as well for this recipe, try to look for large & round or cylindrical potatoes.
Leftovers - Store leftover toast in the fridge & reheat in the air fryer at 375 degrees or 425 degree oven for 3-4 min.
Switch it up! - Use any leftover meat or fried eggs, any microgreens, sprouts, arugula or spinach, top with hummus or mayo instead of guacamole. Add kimchi or hot sauce to spice things up!
