No time for meal prep? This protein-rich Spiced Vanilla Chia Pudding takes 2 min to prep, is the perfect grab & go breakfast or snack & is super satisfying! 

To make this into a more satiating breakfast, add toppings like nuts, seeds and/or full-fat coconut milk or yogurt & some fresh or frozen berries. The flavours in this pudding go well with pretty much anything! 

Did you know that there is a whopping 8g of fiber in 2 tbsp of chia seeds? I recommend aiming to get in 25-30g of fiber daily but that can get tricky if you have a history of digestive issues, so this number is a general recommendation. Chia seeds are low in FODMAPs making them better tolerated than some other sources of fiber.

Directions

  1. Add milk, yogurt, spices & salt to a measuring cup.

  2. Stir, then add chia & protein powder & stir again.

  3. Divide equally into 2 mason jars. Shake after 5 min.

  4. Refrigerate overnight or until firm which can take as little as 30 min!

Ingredients

  • ¼ cup chia seeds

  • ½ tsp ground ginger

  • ¼ tsp ground cloves 

  • ½ tsp cinnamon

  • ¼ tsp sea salt

  • 1 cup unsweetened almond milk

  • ½ cup plain Greek, regular or non-dairy yogurt

  • 2 scoops vanilla protein powder, my fave is Schinoussa whey isolate

  • Optional toppings: toasted coconut, cacao nibs, hemp seeds, berries


 
 

Notes

Protein Powder - I really like a clean whey isolate that’s been sweetened with stevia, like Schinoussa Whey Isolate or a clean beef protein powder that has a good amino acid profile like ATP Labs Supreme Beef Protein.

Grab & Go Snack - Divide this into 2 mason jars so you can just grab, shake & eat on busy days!
