Tasty & Tender Shredded Chicken

If you want long term weight loss and to maintain or build muscle, you need to eat adequate protein. It’s a non-negotiable. But we don’t always have a few hours to meal prep for the week ahead. And it can just feel hard to make dinner some nights. That’s why this TASTY & TENDER SHREDDED CHICKEN is a staple!

This takes less than 5 minutes to prep, has 2 ingredients, it tastes great, you can use it a 100 different ways and it’ll cover your protein needs! And you don’t even need to thaw anything!

 
 

Directions

  1. Pour the broth in your slow cooker (1 cup per 3lb of chicken).

  2. Season the chicken with the salt (½ tsp per 3lb of chicken) and pepper, if using.

  3. Lay the breasts in the slow cooker, place the lid on top and cook on low for 4-6 hours.

  4. Remove the chicken from the slow cooker and place in a bowl and shred with two forks.

    HOT TIP: if you have a stand-mixer, place the chicken in the bowl and use the paddle attachment to shred it.

Ingredients

  • 3-6lb chicken breasts, frozen

  • 1-2 cups broth

  • ½ -1 tsp sea salt 

  • pepper to taste, optional 

Notes

How to Store -  -Store in an airtight container. Freeze in meal-size portions any extras you won’t get through in 4-5 days .

How to Use -  On a salad, chicken salad with some mayo or avocado, for Cobb Salad, substitute for the tuna in my Tuna Nicoise Salad, chicken tacos, in soup, on toast or a roasted sweet potato…the options are endless!
