Summer Strawberry Vinaigrette

 

This vinaigrette is easy to make, delicious and low in calories!

This dressing is sweet but tangy, tasty & simple to make! And it’s even better when strawberries are in season! 

Did you know that strawberries contain more vitamin C than oranges? Vitamin C is a gut health superstar because:

-It helps us to absorb iron & iron deficiency can often result from digestive issues. This has a huge impact on our energy. 

-It is needed to make collagen which keeps our connective tissues (including our gut lining) strong & healthy. 

When our gut lining is compromised, something called ‘leaky gut’ can develop. Signs of leaky gut include digestive issues like gas & bloating, food sensitivities, joint pain & skin issues like eczema & acne. 

 
 

Directions

  1. Place all ingredients except the olive oil in a food processor or blender.

  2. With the processor running, slowly add in the olive oil. Taste & adjust seasoning as needed. That’s it!

Ingredients

  • 150g strawberries

  • 1 tsp honey 

  • ½ tsp sea salt

  • 2 Tbsp lime juice, freshly squeezed 

  • 2 Tbsp apple cider vinegar 

  • ¼ cup extra virgin olive oil

Notes

How to Serve - Serve over any greens. This is particularly good with arugula or spinach. Take it up a notch & top it with fresh strawberries & toasted walnuts! 

Make it Lower in Sugar - Swap the honey for a pinch of stevia.
