One Minute Dressing

I bet you’ll stop buying store-bought salad dressing if you try this out! Most dressings on the market contain inflammatory oils that are linked to obesity, gut issues, anxiety, depression & diabetes amongst other issues. And the ones that contain healthy fats like olive & avocado oil, are very expensive. For these reasons (and because I think it tastes better); I make my own dressing. This is my go-to because it’s sooooo easy to make & super adaptable!
Directions
Combine all the ingredients in a small bowl & whisk until emulsified.
Toss with any greens. Enjoy!
Ingredients
2-3 Tbsp extra virgin olive oil
1 tbsp acid (see Notes)
¼ tsp sea salt
1 tsp Dijon mustard
Optional: ½ clove minced garlic or ½ tsp garlic powder & black pepper to taste
Notes
Acid - Use any freshly squeezed citrus juice like lemon or lime, or any vinegar like red wine vinegar, apple cider vinegar, white wine vinegar or balsamic vinegar.
Serve On - Any greens! Boston, leaf, romaine, mixed greens, arugula, spinach, endive - anything goes!
