Mediterranean Salmon Salad

Did you know that eating bitter foods helps us to absorb more nutrients from our food? They trigger the production & release of digestive juices & enzymes that are critical for proper digestion. This means bitter foods can help with bloating, constipation, loose stools & discomfort from eating!

This salad calls for curly endive, which is a slightly bitter & crisp green that is also rich in antioxidants, folate, potassium & fiber (all great for heart health!).

In addition to that, skin-on & bone-in wild canned salmon is a great source of omega 3s, calcium & vitamin D (which is hard to get in our diet!). Calcium supplementation can be risky for our heart health so it’s best to get in this critical mineral through our diets.

And what I love most about this salad? It’s ready in under 10 min & tastes great.

 
 

Directions

  1. Make the dressing: combine the olive oil, lemon juice, mustard & salt in a small bowl.

  2. Wash & chop the endive & add it to a large bowl.

  3. Dice the bell pepper & add it to the bowl.

  4. Add in your cucumber, salmon, diced avocado, pumpkin seeds & red onion.

  5. Toss to combine. Add in the dressing & toss again. That’s it, dinner or lunch in under 10 min!

Ingredients

  • 2-3 tbsp extra virgin olive oil

  • 1 tbsp lemon juice (freshly squeezed)

  • 1 tsp Dijon mustard

  • ½ tsp sea salt

  • 2 cans wild salmon, bone-in & skin-on (drained)

  • 2-3 cups curly endive

  • 1 bell pepper

  • half a cucumber, peeled & diced

  • ¼ cup toasted pumpkin seeds

  • ¼ cup red onion, diced

  • 1 avocado, diced

Notes

Does raw onion give you gas? - Try swapping raw onion in recipes for green onion tips or chives (both low FODMAP), or reduce the amount of onion in the recipe.

Switch it Up! - Use Belgian endive, arugula, radicchio or watercress. These are all bitter greens that will support digestion.

Sardines - If you like sardines, they work great in this recipe as well! Look for bone-in & skin-on for the most benefits!
