Carrot Slaw

What can help to bring balance to both our gut & our hormones? Eating a raw carrot each day! Raw carrot has a unique toxin-binding fiber that helps to clear out excess estrogen & bad bacteria. And if you find carrot sticks as boring as I do, turn them into Carrot Slaw!
Directions
Make the dressing: combine the mayo, coconut milk, apple cider vinegar, sea salt & stevia or honey in a small bowl.
Add the grated carrot to a medium bowl, add in your dressing & toss to combine. That’s it!

2 cups grated carrot, ~1lb
3 tbsp avocado oil mayo
1 ½ tbsp full-fat coconut milk
½ tsp sea salt
2 tsp apple cider vinegar
¼ tsp stevia (or honey to taste)

How to Serve - This is great as a side, a ‘condiment’ for any protein & as a burger topping!
