What can help to bring balance to both our gut & our hormones? Eating a raw carrot each day!  Raw carrot has a unique toxin-binding fiber that helps to clear out excess estrogen & bad bacteria. And if you find carrot sticks as boring as I do, turn them into Carrot Slaw!

 

Carrot Slaw works great as a side to any protein!

 

Directions

  1. Make the dressing: combine the mayo, coconut milk, apple cider vinegar, sea salt & stevia or honey in a small bowl.

  2. Add the grated carrot to a medium bowl, add in your dressing & toss to combine. That’s it!

Ingredients

  • 2 cups grated carrot, ~1lb

  • 3 tbsp avocado oil mayo

  • 1 ½ tbsp full-fat coconut milk

  • ½ tsp sea salt

  • 2 tsp apple cider vinegar

  • ¼ tsp stevia (or honey to taste)

 
 

Notes

How to Serve - This is great as a side, a ‘condiment’ for any protein & as a burger topping!
