Weeknight Greek Salad

With the highest vitamin C content out of any fruit & veggie, this superfood can improve gut barrier function & increase the diversity in our gut microbiome (both key to functioning at our best!). Vitamin C also helps to boost our immune system, fight fatigue, speed up recovery & it’s needed to form collagen, which is the glue that strengthens connective tissue (essential for healthy skin, tendons & muscle!). Stress, hard workouts & sweating all depletes vitamin C.
This Greek Salad is a tasty way to get in more peppers. It’s super quick to make & perfect for a weeknight, and especially this time of year with peppers, cucumber & tomatoes all in season.
Did you know that vitamin C helps our body absorb iron? Pair this with a steak, burger or any cut of red meat for the most impact!
Directions
Add the cucumber, pepper, onion, tomato & olives to a large bowl.
Add the oil, vinegar, oregano & salt to a small bowl & stir using a whisk or fork.
Add the dressing to the bowl & toss to combine.
Crumble the cheese over the salad & enjoy!

3 medium tomatoes
1 English or 2 small cucumbers, peeled & diced
1 large red bell pepper, diced
½ cup black olives, pitted & sliced
¼ cup onion, thinly sliced
3 medium tomatoes, diced
3-4 tbsp extra virgin olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
½ tsp sea salt
5 oz feta, regular or dairy-free *see notes

How to Serve - This is a perfect side paired with my Smashed Potatoes or Protein Rice & Go-To Shrimp or a good steak.
Dairy doesn’t agree with you? - Use dairy-free feta. Violife Feta is amazingly similar to the regular stuff!
