Directions for Protein Balls

  1. Add all ingredients except the chocolate chips to a large bowl or food processor & mix until the mixture forms a dough that is soft enough to roll into balls, but not overly sticky. Add additional protein powder or almond milk as needed to get the right consistency. Stir in the chocolate chips.

  2. Roll into bite size balls using your hands & place on a cookie sheet lined with parchment. Sprinkle with the Maldon salt if using.

  3. Move the baking sheet to your freezer and freeze until firm. Store in an airtight container in the freezer for the next time you're craving a chocolate chip cookie!

Ingredients

  • 1 1/3 cups oat flour

  • 1/3 cup coconut flour

  • 2 2/3 cups vanilla protein powder (Schinoussa Whey Isolate used)

  • 1/2 cup sunflower seed butter (unsweetened SunButter used)

  • 3/4 cup unsweetened almond milk

  • 2 tsp vanilla extract

  • 1/2 tsp almond extract (to taste, optional)

  • 1/4 tsp sea salt

  • 1/2 tsp stevia powder (to taste)

  • 1/4 cup dark chocolate chips

  • 1/2 tsp Maldon salt

 
 

Notes

Optional add-ins - Chopped toasted walnuts, raisins, cinnamon - anything you’d add to a chocolate chip cookie!

Too Sticky or Too Dry? - The dough should be a bit sticky and easily form into balls. If it's too sticky, try adding more protein powder. If it's too dry, add a little more almond milk or sunflower seed butter. To make rolling the balls easier, slightly dampen your hands.
