Directions for Mint Chocolate Protein Balls

  1. Add all the ingredients, except the chocolate chips, to the food processor and puree until a cookie dough-like texture forms.

  2. Roll into bite size balls using your hands and place on a cookie sheet lined with parchment paper. You'll want to use lightly wet hands to roll these balls, these get sticky!

  3. If using, melt the chocolate chips using a double boiler (a bowl set over a pot with a little boiling water, stirring constantly until melted). Then drizzle the chocolate over the balls.

  4. Place the cookie sheet in your freezer until the balls are firm.

  5. Store the balls in an airtight container, in the freezer, for a protein-rich treat or snack!

Ingredients

  • 1/2 cup chocolate protein powder, Schinoussa whey isolate used

  • 1/2 cup almond butter

  • 1/2 cup shredded coconut

  • 3 tbsp unsweetened cacao or cocoa powder

  • 3 tbsp full-fat coconut milk

  • 1 tsp peppermint extract

  • 1/2 tsp stevia, to taste

  • 1/8 tsp sea salt

  • 1/4 cup dark chocolate chips, optional

 
 

Notes

In a Rush? - Skip the melted chocolate.

Too Sticky or Too Dry? - The dough should be a bit sticky and easily form into balls. If it's too sticky, try adding more protein powder. If it's too dry, add a little more coconut milk or almond butter. To make rolling the balls easier, slightly dampen your hands.
