Zucchini Cheese

I have 2 questions for you: What are you going to do with all that zucchini? And do you like cheese? 

Zucchini season is here and this is one of my favourite ways to use this low-carb, high-fiber & adaptable veggie! Cheese is delicious, but also a common culprit for constipation or loose stools, gas, congestion & skin issues like eczema. I discovered this recipe when I had to take a break from cheese on my own health journey & it remains a staple in our house because it’s easy, tasty & SUPER supportive for gut health!

Nutritional yeast is what creates that ‘cheese’ flavour:

-Rich in B vitamins which help convert our food into fuel (=energy!)

-Contains beta glucan, a prebiotic fiber that supports our immune health. 

Gelatin is what gives this a ‘cheese’ texture:

-It supports leaky gut by helping to restore a healthy mucosal lining (signs of this include bloating, autoimmune disease, food sensitivities, joint pain, allergies etc)

-It provides the building block of collagen 

-It can improve joint health & reduce inflammation

 

You can use this just as you would regular cheese!

 

Directions

  1. Peel, slice & boil the zucchini in filtered water until tender.

  2. Drain the zucchini & add to your food processor while it’s still hot.

  3. Add the coconut oil, nutritional yeast, sea salt & gelatin to the food processor & blend until smooth.

  4. Taste & adjust the seasonings until you get a cheesy taste to your satisfaction!

  5. Pour the mixture into a parchment-lined dish & refrigerate until firm

  6. Store in an airtight container.

Ingredients

  • 2 medium zucchini, peeled & sliced into rounds

  • 1/2 tsp sea salt

  • 1/3 cup gelatin

  • 1/4 cup nutritional yeast powder

  • 1 tbsp coconut oil

Notes

How to Serve - This is great as a snack, over pasta, on a burger – use it any way you would regular cheese! Heads-up: this does not have the same texture as regular cheese when you grate it over hot food - it will ‘melt’ into the meal.

Make a Sauce - Omit the gelatin to make a sauce that you can use for pasta or veggies.

Gelatin - There are more & more great brands out there now. Great Lakes Beef Gelatin is one I use often as it’s GMO- & glyphosate-free and sourced from pastured cattle.
