Sweet Potato Breakfast Toast

Directions

  1. You can use an air fryer, oven or toaster oven for these - preheat air fryer to 400 degrees Fahrenheit or oven/toaster oven to 425 degrees. Combine all spices & salt in a bowl and set aside. Trim both ends of the sweet potato and then slice lengthwise into 1/3-inch thick slices.

  2. Spray with avocado oil spray or drizzle with the oil and season with the spice mix (you may have leftover spice mix, save for another day).

  3. Air fryer directions: When the air fryer is heated, place the sweet potato slices in the basket. Air fry for 15 minutes, until golden & tender. Oven/toaster oven directions: set the sweet potato slices on a baking sheet & toast each side for 10-15 min, until golden & tender.

  4. While the potatoes are cooking, poach, fry or hard-boil the eggs and mash the avocado with a fork.

  5. Once the sweet potato is ready, divide them onto 2 plates. Spread the slices with the mashed avocado and top with cooked eggs. Season with sea salt, black pepper and/or red pepper flakes. Enjoy!

  • 1 Sweet Potato (large)

  • 4 eggs

  • 1 Avocado

  • 1/2 tsp each smoked paprika, garlic powder & sea salt

  • 2 tsp Extra Virgin Olive Oil or avocado oil

Notes

Add Greens - Add a layer of baby spinach or arugula after you spread on the avocado.

Additional toppings - sliced tomato, diced green or red onion, pickled hot pepper slices.

Egg-Free - Skip the eggs and top with hemp seeds
