Protein Rice

This recipe makes perfect rice every time. Plus using bone broth to cook rice is a great way to add more amino acids (the building blocks of protein) & minerals to your diet. And it enhances the flavour! New to making broth? Check out my Pressure Cooker Bone Broth recipe here!

Suffering from symptoms of IBS? White rice is usually easier to digest than other grains & starches, plus bone broth helps to repair a leaky gut (which is often involved in IBS).

Directions

  1. Place the rice in medium bowl and add enough water to cover by 2 inches. Using your hands, gently swish the grains to release any excess starch. Transfer to a fine mesh colander & rinse until the water runs almost clear. Alternatively, soak the rice for up to 8 hours. Using a fine mesh strainer, drain the rice.

  2. In a medium pot, melt the butter & add in the rice & salt. Stir to combine & cook for 1-2 minutes, stirring frequently. This toasts the rice & enhances the flavour.

  3. Add in the broth, and bring to a boil over medium-high heat.

  4. Once the mixture starts to boil, reduce the heat to low, cover the pot & set a timer to 15 minutes.

  5. At 15 min, check the rice - if the liquid has been absorbed & the rice is tender, it’s ready! If the rice is still too firm, add a few tablespoons of water and continue cooking for a few minutes more. Remove the pan from the heat and allow it to sit covered for 5 minutes. Fluff the rice with a fork and serve.

Ingredients

  • 1 cup basmati rice (uncooked)

  • 1 1/2 cup bone broth

  • 2 tsp butter (or ghee or extra virgin olive oil)

  • 1/2 tsp sea salt

Notes

No Broth? - Use a clean broth powder like Organika or simply use filtered water.

Leftovers - Make extra for a busy week. Bonus! Cooked and cooled (reheated or not) white rice becomes ‘resistant starch’ which feeds our good gut bugs and helps to curb a potential blood sugar spike from eating this starchier carbohydrate. To reheat, add a little broth, water or coconut milk to the rice and warm in the microwave or on the stove.
