Light, fluffy, high in protein, and surprisingly satisfying - this simple cloud bread recipe is one of my favourite ways to support cravings and blood sugar balance without feeling restricted. Made with just a few ingredients, it’s naturally low in sugar and easy to customize with vanilla and lemon for a fresh, lightly sweet flavour.

This recipe is especially helpful during perimenopause and menopause, when increasing our protein intake and supporting blood sugar regulation makes a big difference for energy, cravings, recovery, and body composition. It’s a simple snack or dessert option that feels indulgent while still supporting your goals.

 
 

Directions for 3-Ingredient Protein Cloud Bread

  1. Preheat oven to 350°F.

  2. Whip egg whites to stiff peaks.

  3. Add protein powder. If using, add lemon juice, stevia and/or vanilla extract. Then whip again to combine.

  4. Pour into a parchment-lined oven-friendly dish.

  5. Bake for ~25 min, until baked through and lightly golden.

  6. Allow to cool, then slice. Store in the fridge.

  • 300g raw egg whites

  • 40g vanilla whey isolate (Schinoussa French Vanilla whey isolate used)

  • stevia, vanilla extract and/or fresh lemon juice to taste

Notes

How to Serve - Great on its own, or serve with my Spring Strawberry Rhubarb Sauce or Saucy Blueberry Chia Jam. Delicious topped with Greek yogurt, berries, or nut butter as well.

Flavouring - You can adjust the flavour and sweetness depending on your protein powder and preferences.
