5 reasons you want to make this:
These balls are high in protein & low in calories.
They’re delicious.
They make a great grab & go snack.
Or a healthy dessert.
And they are sooo easy to make!
Whether you are new to eating a higher protein diet or not, it can be hard to eat an optimal amount of protein for our bodies when we’re on the go. For this reason, I like to have higher protein snacks & desserts always on hand like these Key Lime Pie Protein Balls!
Directions
Add all the ingredients except the toasted coconut to your food processor or a high power blender. Puree until a cookie dough-like texture forms.
Pour the toasted coconut onto a plate. Roll into bite size balls using your hands & lightly roll them over the shredded coconut until mostly covered. Place the balls on a cookie sheet lined with parchment paper.
Freeze & then place in an airtight container. Store in the freezer & enjoy as a sweet treat or a protein-rich snack!

Notes
Sticky Balls? - Dampen your hands before rolling & the dough won’t stick to your skin!
Dough is too dry? - Add more water, 1 tbsp at a time until it is sticky enough to roll into balls.
Dough is too sticky? - Add more protein powder or oat flour, just a little bit at a time.
