Fresh Herb & Dijon Potato Salad
10 ingredients · 30 minutes· 6-8 servings
Is potato salad a health food? YES! Cooked & cooled potatoes are rich in resistant starch which is a prebiotic fiber that feeds our gut bugs. This helps to ensure our gut microbiome thrives in both population & diversity. And research has shown the more diverse our microbiome, the better our overall health!
Adapted from Ina’s Garten’s French Potato Salad, this salad uses healthy fats, fresh herbs & broth for flavour, making this dish super supportive of our gut health!
Serve this at your next BBQ, at the cottage or as a side for any meal this summer! It will go over as a favourite for everyone.
Directions
Cut any larger potatoes in half or thirds & add to a large pot and cover with water. Add dash of salt to the pot & bring to boil. Simmer until potatoes are just tender then drain.
Transfer to a large bowl & gently toss with the broth while still warm. Add the herbs & beans if using.
Combine the vinegar, mustard, salt & pepper in a small bowl & slowly add in the olive oil. Add to the potato mixture & gently toss to combine.
Serve warm, room temperature or cold.
