Fresh Herb & Dijon Potato Salad

Is potato salad a health food? YES! Cooked & cooled potatoes are rich in resistant starch which is a prebiotic fiber that feeds our gut bugs. This helps to ensure our gut microbiome thrives in both population & diversity. And research has shown the more diverse our microbiome, the better our overall health!

Adapted from Ina’s Garten’s French Potato Salad, this salad uses healthy fats, fresh herbs & broth for flavour, making this dish super supportive of our gut health! 

Serve this at your next BBQ, at the cottage or as a side for any meal this summer! It will go over as a favourite for everyone. 

 

This potato salad is the perfect side for any grilled meat.

 

Directions

  1. Cut any larger potatoes in half or thirds & add to a large pot and cover with water. Add dash of salt to the pot & bring to boil. Simmer until potatoes are just tender then drain. 

  2. Transfer to a large bowl & gently toss with the broth while still warm. Add the herbs & beans if using.

  3. Combine the vinegar, mustard, salt & pepper in a small bowl & slowly add in the olive oil. Add to the potato mixture & gently toss to combine.

  4. Serve warm, room temperature or cold. 


Ingredients

  • 3lb new or fingerling potatoes, scrubbed *organic preferably

  • ¼ cup red or sweet onion, thinly sliced

  • ¼ cup mix of fresh chives, basil & parsley, finely diced 

  • ¼ cup chicken stock 

  • ¼ cup  white wine vinegar

  • ¼ cup extra virgin olive oil

  • 1 tsp Dijon mustard

  • 1 ½ tsp Kosher salt plus extra salt for boiling 

  • pepper to taste

  • optional: steamed green or yellow beans 

Notes

How to Serve - This salad is the perfect side for grilled or roasted meat.

Make it Lower Carb - Reduce the potatoes to 2lb and add in lots of steamed yellow or green beans, snow or snap peas.
