Berry Protein Ice Cream

Craving ice cream? This really does resemble ice cream, has only 4 ingredients, is super low in calories, rich in protein, takes 2 min to make & no ice cream machine is required!
Can’t do dairy? I don’t have a dairy-free alternative for this (yet) but I have some words of hope. I also removed dairy for a period of time because it made me gassy, bloated & constipated (or the opposite depending on the day). Now I can eat dairy regularly without issue. For me, it was a matter of improving my gut health. Depending on your individual situation, dairy may always cause issues but often when we bring balance to our gut & give it time to heal, we gain more freedom with foods that were once problematic for us.
Directions
Add all ingredients to a food processor or blend and puree on high until smooth, light & fluffy!
Serve immediately for a more ‘ice cream’ texture. This is great as leftovers as well but will resemble more of a pudding.
Ingredients
1/3 cup cottage cheese
½ cup frozen berries (raspberries are my favourite for this, but any will work!)
¼ tsp vanilla extract
¼-½ tsp stevia, or to taste
Notes
Add Toppings - Cacao nibs, toasted coconut, fresh berries, chopped walnuts, almonds or pecans, toasted pumpkin seeds or sunflower seeds, hemp seeds - anything goes!
Berries - Use any berry for this - raspberries, strawberries, blackberries, blueberries or a blend of your favourites!
Add Spice - Add in a little cinnamon before blending to add some natural sweetness!
